Susan Bae
Born and raised in Los Angeles, Executive Pastry Chef Susan Bae (2023 James Beard Foundation Semifinalist, formerly of MICHELIN-starred Kali) is a founding member of the Moon Rabbit team, and through the power of social media- she met Chef Kevin Tien and they opened the restaurant together during the pandemic where she was the only person prepping, working on the line and creating dishes for pastry. Before her time there, her ten year career found her at the Fairmont Hotel, the Animal group then led her to MICHELIN-starred Kali.
She draws inspiration from nature- loves texture- and uses it as a reference point, adores herbs and tries to switch up standard pastry flavors. Her favorite ingredient is eggs because they are so versatile
As an aspiring schoolteacher, she likes to mentor; and believes it is important to make everyone’s voice heard. She feels that cooks are so important and things could not get done without them- that collaboration is key.
