Greg Baxtrom
Greg Baxtrom is the chef-owner of acclaimed Olmsted, Patti Ann’s and 5 Acres. Prior to opening Olmsted in 2016, Greg worked in some of the world's most exciting kitchens, including Alinea, Blue Hill at Stone Barns, Per Se and Lysverket in Norway. His 50-seat restaurant showcases a seasonal and creative vegetable-forward menu that highlights produce from the lush backyard garden, as well as local farmers and purveyors. The restaurant has been awarded one of Esquire's Best New Restaurants in America; Bon Appetit's 50 Best New Restaurants in America; Food & Wine's 2017 Restaurant of the Year; The New York Times "10 Best Restaurants in 2016"; among others.
In March 2022, Greg opened Patti Ann’s just down the block from Olmsted celebrating Midwestern fare. The restaurant has been at the forefront of multiple industry trends, as seen in outlets like The Wall Street Journal and Eater National,and has been featured in The New Yorker, Crain’s New York, among other outlets. Greg opened his highly anticipated first Manhattan restaurant in December 2022, Five Acres. Opening with dinner, Five Acres quickly launched a popular breakfast and lunch service, and the restaurant has been featured in outlets like The Today Show, Robb Report, Bon Appetit and Bloomberg, among others.
At the beginning of the COVID-19 pandemic (March 2020), Greg pivoted Olmsted to become a community food bank, partnering with The Lee Initiative and then World Central Kitchen to prepare and offer hundreds of free meals and pantry items daily. The food bank now operates in partnership with Rethink Food, and has served tens of thousands of hot meals to date. In July 2020, Greg launched the Black Entrepreneur Series, a pop up series that featured talented NYC-based Black chefs, bakers and sommeliers.
